Double Mint Chocolate Cookies

Ingredients
Cookie
1 cup sugar
12 cup Land O Lakes® Butter, softened
12 cup unsweetened cocoa
12 teaspoon vanilla
2 cups all-purpose flour
1 teaspoon baking soda
12 teaspoon baking powder
14 teaspoon salt
12 cup water
Frosting
2 cups powdered sugar
12 cup Land O Lakes® Butter, softened
1 to 2 tablespoons milk
1 teaspoon vanilla
14 teaspoon mint extract
14 cup finely crushed starlight peppermint candies
*Substitute 2 teaspoons vinegar or lemon juice plus enough milk to equal 1/2 cup. Let stand 10 minutes.
How to make

STEP 1
Heat oven to 400°F.

Combine sugar, 1/2 cup butter, cocoa, egg and 1/2 teaspoon vanilla in large bowl. Beat at medium speed, scraping bowl often, until well mixed. Add flour, baking soda, baking powder and salt alternately with buttermilk and water. Beat at low speed until well mixed.

Drop dough by rounded teaspoonfuls, 2 inches apart, onto greased cookie sheets. Bake 7-9 minutes or until top of cookie springs back when touched lightly in center. Cool completely.

Combine all frosting ingredients except peppermint candy in small bowl. Beat at medium speed, scraping bowl often, until creamy. Spread about 1/2 tablespoon frosting on top of each cookie; sprinkle with crushed candies.
