Lime Coconut Bread

Ingredients
Bread
1 34 cups all-purpose flour
14 cup sugar
2 teaspoons baking powder
14 teaspoon salt
12 cup cream of coconut
14 cup Land O Lakes® Margarine, melted
1 large Land O Lakes® Egg, slightly beaten
1 tablespoon fresh lime juice
2 teaspoons freshly grated lime zest
Glaze
12 cup powdered sugar
1 tablespoon fresh lime juice
*Substitute 1 1/2 teaspoons vinegar or lemon juice and enough milk to equal 1/2 cup; let stand 5 minutes.
How to make

STEP 1
Heat oven to 350°F. Grease and lightly flour 8x4-inch loaf pan; set aside.

Combine flour, sugar, baking powder and salt in bowl; set aside.

Combine all remaining bread ingredients in another another bowl; mix well. Add flour mixture to buttermilk mixture; mix just until moistened. Spread into prepared pan.

Bake 40-50 minutes or until light golden brown and toothpick inserted in center comes out clean. Let cool 10 minutes in pan; remove to cooling rack. Cool completely.

Combine powdered sugar and 1 tablespoon lime juice in bowl; mix well. Drizzle over bread; let stand until glaze is set.
