2 tablespoons Land O Lakes® Light Butter with Canola Oil
2 cups frozen hash brown potatoes with onions and peppers, thawed
1/4 cup sour cream
4 large Land O Lakes® Eggs
1/4 teaspoon salt
1/4 teaspoon pepper
1/2 cup chopped cooked ham
STEP 1
Melt Light Butter with Canola Oil in 10-inch nonstick ovenproof skillet over medium heat. Add potatoes; continue cooking, stirring occasionally, 5-6 minutes or until potatoes are tender and lightly browned.
STEP 2
Combine sour cream, eggs, salt and pepper in bowl; beat with whisk until well mixed. Sprinkle ham evenly over potatoes; pour egg mixture over top. Cover; reduce heat to low. Cook 3-4 minutes or until eggs are almost set.
STEP 3
Heat broiler to high. Place skillet in oven; broil 6-10 inches from heat 5-6 minutes or until eggs are set and lightly browned.
