A great way to use up your summer zucchini bounty, these fritters work well as a vegetable side dish or light summer meal when served with marinara sauce.
2 1/2 cups shredded zucchini, patted dry
1/2 cup panko bread crumbs
1/4 cup grated Parmesan cheese
1 large Land O Lakes® Egg lightly beaten
1 teaspoon chopped fresh thyme leaves
1 teaspoon finely chopped fresh garlic
1/2 teaspoon freshly grated lemon zest
1/4 teaspoon salt
1/4 teaspoon pepper
1 Half Stick (1/4 cup) Land O Lakes® Butter
Combine all ingredients except butter in bowl; mix well.
Melt butter in 12-inch skillet over medium heat.
Shape zucchini mixture into 8 (about 1/4 cup each) balls; flatten into patties.
Place patties into skillet; cook 3-4 minutes or until golden brown on one side. Turn patties; continue cooking until golden brown and cooked through. Serve immediately.
