This recipe comes to us from Land O’Lakes member-owner Sadie Frericks of Blue Diamond Dairy. Every fall, the Frericks enjoy apples from the three apple trees on the farm, planted for each of their three children. Enjoyed fresh off the trees, the apples are are also baked into all sorts of sweet and savory dishes–everything from apple and sage sausage meatballs to traditional apple crisp to these apple Co-Jack scones–a family favorite! Ingredients

1 (6- to 8-ounce) medium apple

2 1/2 cups white whole wheat flour or all-purpose flour

6 tablespoons sugar

1 tablespoon baking powder

1/2 teaspoon salt

1/2 cup cold Land O Lakes® Butter, cut into 8 to 10 pieces

8 ounces (2 cups) Land O Lakes® Co-Jack Cheese Farmstyle Shreds

1 cup whole milk

1 large Land O Lakes® Egg, slightly beaten

 

Land O Lakes® Butter with Canola Oil, if desired

Land O Lakes® Honey Butter Spread, if desired

How to make

  1. STEP 1

    Cut apple into 10-12 wedges, removing core. Slice each wedge crossways into thin, triangular pieces. (You will need 2 cups.) Set aside.

  2. STEP 2

    Combine flour, sugar, baking powder and salt in large bowl. Cut in butter with pastry blender or fork until mixture resembles coarse crumbs. Add apple pieces and cheese; stir gently to combine. Fold in milk and egg until stiff dough forms. Refrigerate dough 30 minutes.

  3. STEP 3

    Heat oven to 425°F.

  4. STEP 4

    Divide dough in half; turn onto well-floured surface. Pat each half into circle, about 1 inch thick. Cut each circle into 6 wedges (like cutting a pie). Transfer wedges to ungreased baking sheet, placing at least 1 inch apart.  

  5. STEP 5

    Bake 10 minutes; rotate pan. Bake 2-4 minutes longer or until tops of scones are golden brown. Let cool 5 minutes; remove to cooling rack.

  6. STEP 6

    Serve warm with Butter with Canola Oil or Honey Butter, if desired.
