Egg bakes are an easy meal-in-one dish – perfect for breakfast, lunch or dinner. They come in many varieties and are simple to make. There are so versatile you can throw in any combination of ingredient you have on hand. Perfect for making ahead the night before or you can whip them up for a last minute no-brainer meal.

Egg Bakes or Stratas

Egg bakes or stratas are made from a mixture of bread, eggs and cheese. They can incorporate a variety of other flavors by adding meat and/or vegetables. Egg bakes are the ideal make-ahead breakfast or brunch dish and can make your life so much simpler. The night before you are serving, it takes about 30 minutes to put the egg mixture together. Then you can forget about it for next 8 hours or overnight. This holding time allows the bread layers time to soak up the savory custard. The next morning, the only step is to bake it. Preparing it in a glass baking dish will make it ready to present to guests right out of the oven.

Quiches are very versatile and quick to put together. They can be used any time of the day- even as appetizers. Quiche’s typically have a pastry or pie crust on the bottom and filled with a combination of eggs, cream, cheese along with various other meat and/or vegetables. You can vary the ingredients to match the mealtime – Swiss cheese for breakfast, chicken & rice for brunch, chicken and corn for supper.

Frittatas are a combination of an omelet and quiche. They are convenient like an omelet because they are cooked on the stove top in a pan. Like quiches, the additional ingredients are mixed in with the eggs rather than folded into the center of the eggs. Frittatas tend to be firmer than omelets because they are cooked over low heat. To finish cooking the top, they are sometimes placed under the broiler for a few minutes. They can be cut into wedges and served right from the pan.

Quiche was one of my father's favorites. A much cherished Christmas present many years ago was a quiche baking dish that he had special ordered. It remains a treasured reminder of his thoughfulness.

I love all egg dishes. So easy to make a meal with an egg or two with some added veggies, mushrooms and a little cheese.
